Pork tenderloin, potato and Brussel Sprouts

Ain’t the prettiest picture, but it tasted delicious.

It does take time to cook a pork tenderloin, but it’s not a “hard task” in the kitchen.

The tenderloin is a lean, mean protein choice. A baked potato with sour cream provided a carb and a dairy (I do like sour cream, ha). Brussels Sprouts for a veggie win! No fruit here, and no stand out fat choice. You could add olive oil for the sprouts- but they didn’t need it.
